So every now and again, I actually have a win in the kitchen. When I do, I take photos and message my friends that will understand that this is a big deal. So yes...I gloat, pat myself on the back, do a little victory dance and if the kids eat it too...well, that's just too much for my little heart to handle.
This soup is one of those win wins in my house, so I thought I'd share my recipe. Now keep in mind that the measurements are fairly accurate (it's one of those throw in this + that = yummy), however, feel free to adjust to your liking (I won't be offended...just don't tell me).
CHICKEN SAUSAGE + KALE + POTATO SOUP (need to come up with a shorter name)
- 1 package chicken sausage (ours were Alderwood Farm for those local island folk and contained four sausages)
- 1 Tbsp butter
- 1 Onion finely chopped
- 3-4 Cloves Garlic finely chopped
- 3-4 Tbsp Cooking Wine
- 1 tsp dried rosemary
- 1 tsp dried basil
- 1/4 tsp ground nutmeg
- 1 Tbsp Honey
- 4 C Chicken Stock
- 2-3 C quartered baby potatoes
- 1 Bunch Kale roughly chopped
- 1/2 C Heavy Cream or Half + Half
COOKING INSTRUCTIONS Cook sausages in large pot (same that you will be using for soup). When completely cooked, remove to a plate and add butter (warning...it will smoke a bit when the butter mixes with the grease from sausages) onions + garlic. Stir and add cooking wine, rosemary, basil, nutmeg and honey, while scraping any little sausage bits from bottom of pot. Allow that yumminess (it will smell great) to simmer for a bit until onions are cooked. Add chicken stock and bring to boil. Reduce heat, add potatoes and simmer on low until potatoes are cooked (approx. 8-10 minutes). Roughly chop the sausage and add to soup + kale and cook for 2-3 minutes more. Stir in cream and serve with feta cheese. We've also tried it topped with smoked apple cheddar or blue cheese (also very delicious). Enjoy!!
